As their name suggests, tacos are their specialty and they have almost a dozen different kinds to enjoy. You can get everything from Mahi Mahi to chorizo sausage folded in a corn or flour tortilla and topped with all the fixings you could ever want.
If you want to take your meal to the next level, then you’ll simply have to try their monster burrito, nachos, and other iconic creations. Just don’t forget about their appetizers as you build out your meal, as it’s easy to get full fast while eating here. Although you cannot lose no matter what you choose, you definitely won’t want to miss their fried avocado wedges and homemade guacamole.
Although they have the menu of a full-size restaurant, they make all the magic happen within the confines of their converted Airstream trailer. They have comfortable covered seating all around the trailer, giving you a place to chill as you get your grub on.
You absolutely need to try their:
Calimex
The Calimex appetizer always gets rave reviews from their loyal patrons. They create this decadent treat by slicing up fresh avocado into wedges, then covering them in seasoned breading. The whole lot goes into the deep fryer until golden brown. And once it comes out, it gets a drizzle of cilantro white sauce to finish it off right.
Paco’s Tacos
When nothing will do but a blast of Gulf flavors, you can always rely on the Paco’s Tacos to come through for you. These tacos start with corn tortillas filled with deep-fried Mahi Mahi coated in delicious Mexican spices. On top of that, they add pickled red onions, serrano cabbage, and cilantro before covering it all in southwest cilantro white sauce.
El Gigante Burrito
When you order the El Gigante Burrito, you’ll likely walk away feeling like you will be full for days. They create this fan-favorite on a large flour tortilla, starting with pork, chorizo sausage, or chicken. You can also elect to sub out those proteins for either shrimp or fried avocado, but it’ll cost you extra. After that, they fill it up with beans, yellow rice, pico de gallo, cheese, guacamole, and sour cream.
Mucho Nachos
The Mucho Nachos are always a good choice when you want to indulge in your cheesy cravings. To make this dish, they cover a huge pile of tortilla chips in your choice of chicken, chorizo, or pork. Over that, they add cheese, black beans, jalapenos, pico de gallo, sour cream, and guacamole.
If you want an extra dose of flavor in every bite, ask for one or all of their homemade sauces. If you want it mild, then you’ll need to request the Southwest Cilantro White sauce. On the hot side, they have two options. You can choose either the Smokey Chipotle or Habanero sauce, both of which are considered quite spicy.
