Say Cheese! showcases just how good the humble grilled cheese can be. The food truck pairs these grilled cheeses with dips and serves them in a setting that’s perfect — right along the boardwalk in Destin.
The menu at Say Cheese! Features a dozen different melts, which range from the traditional to the creative. For a common but delicious sandwich, go with the Classic Melt (American cheese) or Three Cheese Melt (cheddar, Colby and Swiss cheeses). The Pizza Melt, Spinach Artichoke Melt and sloppy-joe filled Dude Melt are just a few of the more unique creations.
All of these sandwiches come with a dipping sauce, and a different one is suggested with each sandwich. If you’d like something other than what’s suggested, the tomato soup, ranch and barbecue sauces can all be substituted for each other. Chips and a pickle are also included.
The rest of the menu consists of a single soup (tomato soup), drinks (Coca-Cola products) and two desserts. Those two grilled desserts aren’t to be missed, though.

Mac Daddy Melt
A grease-bomb for the stomach, the Mac Daddy Melt is heavy but delicious. A classic grilled cheese stuffed with macaroni and cheese, this doesn’t even pretend to be healthy. Order it on a cooler day or evening, when you’ll have an easier time eating it all.
Dirty South Melt
Even bigger than the Mac Daddy Melt, the Dirty South Melt piles a typical Southern meal between two slices of grilled bread. There’s pulled pork, macaroni and cheese, and caramelized onions, as well as plenty of American cheese. This one isn’t for the faint of heart.
Spinach Artichoke Melt
The closest thing to a healthy option on the menu, the Spinach Artichoke Melt combines spinach, artichoke hearts, parmesan and cheddar into a flavorful combination.
S’Mores Melt
Who said you need a fire to have a s’more? Ask the staff to grill up one on your favorite bread, and indulge.
N.C.B. Melt
Another dessert option, the N.C.B. Melt consists of Nutella, cream cheese and banana. The fruit must make it somewhat healthy, right?
Insider Tips:
– If anyone in your party has a gluten or lactose intolerance, they won’t find anything suitable on the menu here. That doesn’t necessarily mean you need to miss out on grilled cheese, though. There are enough food trucks in the area that people with dietary restrictions can find something else nearby while those who want grilled cheese order a sandwich from Say Cheese!
– On quiet nights, the truck has been known to close early if there aren’t any customers. Before walking all the way along the boardwalk specifically for grilled cheese, call to see whether they’re open if there aren’t many people around. If you call, they’ll probably stay open until you make your way to the truck.
